We spend so much time looking for the best quality produce and freshest ingredients. Shouldn't that produce be prepared and sliced with the same respect? A good knife should last you a life-time - or until you lust after another! Budget for a chefs knife, paring knife and a stone (ideally two but you can get combination stones of 1000 grit and 4000-6000 grit).M.S.
